Rhubarb Dessert

Ingredients

2 cups flour

1 cup butter

2 tablespoons sugar

pinch salt

6-8 cups rhubarb diced

1 1/2 cup sugar

1-2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 large box instant vanilla pudding prepared as directed

Cool Whip

Directions

Mix flour, butter, sugar & salt as for pie crust. Press into 9x13" dish.

In large bowl, combine rhubarb, sugar, cinnamon & nutmeg.

Bake 1 hour at 350 degrees. Cool.

Prepare instant vanilla pudding mix as directed & spread over cooled rhubarb.

Top with cool whip or vanilla ice cream.
